This washed Bourbon lot is as classic as it gets, with its super clean and complex profile, a creamy mouthfeel and a slight herbal finish.

  • Roaster's Notes

    Heza Washing Station processes its coffees by pumping water from a nearby natural spring. After pulping, the cherries undergo a double fermentation process: parchment spends around twelve hours dry fermenting and twenty four hours wet fermenting. The parchment is sometimes ‘footed’ after fermentation; meaning a team agitates and dances on the slippery coffee parchment by foot, helping to loosen any remaining mucilage clinging to it. The coffee is then rinsed in fresh water, graded by density and left to soak for another four to six hours in the final rinse tank. Finally, it spends between sixteen to twenty days slow drying, until it reaches the ideal moisture level for export.
