This Kuria lot, labelled Extra Special by the producers, is a natural processed coffee, anaerobically fermented with Ava – which is a mould from the Koji family – for an enhanced sweetness and complexity.  

A few unusual takes on coffee processing coming out of Kenya, from the hands of the amazing Lot20 team and Misadhi Coffee.

  • Roaster's Notes

    Over 2000 growers contribute to the lots coming out of the Misadhi Coffee’s washing station.

    All cherries are collected in buying centres across the ward and then sent off for delivery at the processing facilities in Rongo, Migori.

    Once sorted, the cherries are filled into fermentation barrels, where, in an oxygen-free environment, nature takes its course. The natural yeasts present on the cherries are enhanced with Ava, a mould used to enhance the coffee’s natural fruitiness and let to ferment for four days before being put out to dry.
