El Salvador – Fredy Umana

Chinotto, Caramel, Cocoa

Fredy Umana owns and operates Finca Fredy, a 1-hectare farm in the Chalatenango region of El Salvador. The farm is home to around 4500 pacamara trees and its natural coffees are dried for 25-30 days on raised beds.

The result is a complex and super sweet cup. We just can’t get enough of the El Salvadorian natural cup profile!

  • Roaster's Notes

The average farm held by producers in Chalatenango is between 1–3 manzanas in size (1 manzana is slightly smaller than a hectare), and most yield fewer than 20 full-size bags of exportable coffee annually. They predominantly grow Bourbon, Pacas, and Pacamara varieties, and until the 2010s these coffees were only sold on the local market, where they would sell for low prices. Our importer Café Imports have worked closely with these growers for several years, granting them access to a wider market and securing the higher prices coffees with this exceptional quality demand.
