Honey, Cranberry, Floral

This is a washed Kent lot produced by Leon Christianakis and his team at Tembo Tembo estate, located in Oldeani. Tanzania is famed for its commodity coffee but people like Leon have been working very hard to put the country on the specialty coffee map. We’re here for it!

  • Roaster's Notes

Cherries are first sorted in the field before being transported to the washing station for de-pulping, which occurs in the evening. An open fermentation process is initiated, lasting approximately 12-13 hours. Once the coffee is well fermented, the fermentation level is checked before the coffee is washed and graded to separate P1, P2, and floaters. The drying process on the beds takes approximately 13-16 days, depending on weather conditions, until the parchment reaches a moisture content of 12% on the bed before being transferred to the dry store.
